A good knife, unfortunately doesn't feel organically in my hand
I have been a chef for nearly 30 years and have to say I think this knife is amazing. First: aus10 steel is in my opinion the best steel for chefs knive. Second: it's a medium weight knife which for the size is surprising. Third: the handle and pinch make it easy to work.with for lond periods of time. Forth: Paying less than £100 for this knife is criminal. If you want a well rounded work horse of a blade this is the knife for you. In my opinion you won't be disappointed.
An impressive looking butchers knife that comes in a nice presentation box and sheath. It is overly large for most common kitchen tasks, but that shouldn't be a surprise to anyone if you read the description. I took a star off because while sharp I would have expected the 'out of the box sharpness' to be just a little more for this price.
Never indulged myself in such an extravagant kitchen knife before but wish I had earlier. I bought this in the Black Friday Sale - only way I could afford it. It's truly a beautiful piece of art. The weight, balance, sharpness, how it looks, how it feels in the hand. All of it... stunning! I think I'll buy a new one of the range each Black Friday. Only gripe is the lack of an individual knife sheath which comes with the lower quality range. Seems a bit bizarre and would like an explanation from the manufacturers tbh - only reason I gave it a 4 rather than a 5. Recommend it though.
Second review after a year or so of use. I've only used this only on vegetables, cooked meats etc and never as a clever or on anything that could damage the blade. That said, it has niches all along the edge and they have started to show signs of rust. It's still a lovely knife to hold and use but has to be sharpened more often than any other knife in my kitchen. The niches never sharpen out as they are deeper and would result in a lot of metal being removed, thus shortening the knifes life. Good pics are awkward but zoom in on these two and you'll see the problem. I have to say that I'm now dissappointed with this knife and can't recommend it to you. Original review was five star as follows; This is a beautiful knife, I use it every time I can. Balance is perfect, it feels very comfortable in the hand and is as sharp as a razor. It was delivered very quickly and comes packed in a sturdy presentation box. I've had Santoku knifes previously and this is the best yet, highly recommended.
Its probably not acceptable to admit a liking for knives, I prefer them to guns but guns aren't that useful in a kitchen unless you're really unhappy with the chef. At any rate, Ive been coveting a considerably more expensive knife brand for about two years now but I really needed a decent 6 inch one so had to buy something. The reviews for this knife were good so I took the plunge and wow, I'm really glad I did. This is a thing of utter beauty. I just want to leave it in its box and show it to friends when they come round. Its absolutely razor sharp, Ive never seen an edge that fine and its beautifully balanced in the hand. Theres a really lovely design touch with the middle rivet too, very simple and understated and it gives the knife a really subtle and very classy finish. I genuinely dont have the hankering for the other brand anymore. Zelite has won me over.
In practical terms it is just that 1mm edge of sharp steel that does all the cutting and the rest is furniture and style. However, beyond that the design of a quality knife is mostly all about ergonomics - the focus being to allow the user to wield a super-fine cutting edge with total control and finesse (and consequently as safely as possible). First impressions are that the balance and secure grip offered by the handle do exactly that, it inspires confidence that a lethally sharp blade isn't about to slip out of your hand and sever a digit or two. The full weight is also reassuring and offers good feedback. Twist it around in your hand and the control of the precise cutting angle you want to apply is assured. None of these features are a given and some other designs (even more expensive ones) fail spectacularly in this regard. Of course any new knife in this price bracket should be sharp out of the box and you would expect that, no surprise then that this knife certainly is but it's hardly the most important feature. So many reviews are harping on about how 'sharp' it is the first time they use it, wow, but no matter how high the quality of steel the cutting edge is not going to stay sharp through your expected many years of ownership without regular maintenance. Even careful use in everyday situations will eventually blunt it. So think about that - you can either have it professionally sharpened or even better: learn to do it yourself. A wet stone is going to offer the best method for keeping it like new but there is a technique which needs to be learned in using one. Avoid cheap electric or manual sharpeners as these may well destroy the edge entirely (despite claims to the contrary), and even the best electric sharpener will only get it back to 'tolerably sharp' - and not original factory sharp. I do own a CatraHone diamond electric knife sharpener which is perhaps one of the best and puts an acceptable edge (say, 90% of the way there) on my other general purpose knives. However I won't be using it on this blade - the grinding angle is wrong for a start, so IMO it is wet stone only for this this blade. Improvements? Well the knife itself is a fine tool and I can think of no particular improvement that is not simply about appearance. Steel hardness, brittleness, ductility and other intrinsic qualities affecting the cutting performance apart there is nothing extra to discuss I think. Some additional instruction on how to care for your blade should definitely be included as it is obvious that some people (reading these and YouTube reviews) think it's fine to cut food on granite worktops, glass cutting boards and ceramic plates! Also, and although I'm not denying the box it is shipped in is cute and protects well during shipping, I would suggest that a simple but sturdy wooden storage case may be a much better alternative, it would last far longer and probably not much more expensive to produce either. As a viable storage option to a knife block or magnetic rail a hinged wooden case would add a touch of class. Personally I don't want to be keeping a variety of cardboard packing boxes around my kitchen, they will go tatty fairly rapidly and thus consigned to a remote cupboard or the recycling bin - if not immediately (like mine) then as soon as it gets stained or scruffy or the possibility of needing to return it fades. Anyway, in conclusion the Zelite Infinity 7" Santoku gets a well deserved 5 stars from me.
Damascus steel blade, need I say more? Okay, I will :) I've always admired chefs/cooks that can use longer, say 9 inch, knives, but though I have normal size hands I've always preferred a 6 inch chefs knife, for just about everything, and this one is excellent :) The finish on the Dalstrong is more impressive and it's edge near perfect but the Zelite's handle and, for the pinch grip, the bolster beats it for comfort, a close run though. You'll want a whetstone and guide, (get them at then same time to save on the postage !) as this is NOT a throw away when it gets dull knife, not one you'll just throw into the kitchen drawer when your done with it, you'll want to pamper this knife and show it off to your friends "It's sharp mind !" Well worth the price; Sabatier knives, which I've used since I could afford GOOD knives in the early 1980s are around the same price but no where nearly as good, though I managed to get nearly 20 years from them, I'm confidant these will last even longer, maybe the last knives I , or you, will ever have to buy, unless I drop it from a moving car ! A pleasure to use, and I do every day, if it went missing I'd buy it again in a heartbeat.
Wonderful knives, really pleased, quickly dispatched, very happy with items & service A+++ For over 30 years I have been using 4 Sabatier 2 Lion knives 4”, 6”, 8”, 10” 1 Sabatier 10” Carbon Steel Chef’s Knife 2 Victorinox Paring knives 3.25” and 4” The best knife I possessed was a dirty blue grey Sabatier 10” Carbon Steel that was given to me by my sister in law who as a cook used it with a hammer to chop up frozen food. Using a file and a steel I reclaimed it and until recently it was the best knife I’d ever owned. Recently I was reading about Japanese knife manufacturing using laminates of different steels having trained as an Engineer I was absorbed As a result, I went on Amazon and purchased from ZELITE INFINITY 1 ZELITE INFINITY Paring Knife 4 inch - Alpha-Royal Series - Best Quality Japanese AUS10 Super Steel 67 Layer High Carbon Stainless Steel 1 ZELITE INFINITY Utility Knife 6 Inch >> Executive-Plus Series >> Best Quality Japanese AUS10 Super Steel 45 Layer Damascus, Incredible G10 Handle, Full-tang They’d arrived so I decided we’d have some sort of salad for tea and put the 6” utility to use I was amazed everything was like cutting butter, I was about to cut a tomato into 6 slices but cut 3 and the remaining half into 12, incredible we were in danger of getting about 30 slices of cucumber each instead of 6. Within 2 days I’d ordered, 1 ZELITE INFINITY Chef Knife 8 Inch >> Executive-Plus Series >> Best Quality Japanese VG10 Super Steel 67 Layer High Carbon Stainless Steel, Incredible G10 Handle 1 ZELITE INFINITY Chef Knife 10 Inch >> Alpha-Royal Series >> Best Quality Japanese AUS10 Super Steel 67 Layer High Carbon Stainless Steel, Incredible G10 Handle So now, going to the opposite extreme I took the 10” knife and put 8 cuts into a clove of garlic 4 at 90degrees then finely chopped, I’ve never found anything so easy these knives are absolutely unbelievable, all of them! Thank you Zelite Infinity! ZELITE INFINITY Chef Knife 10 Inch >> Alpha-Royal Series >> Best Quality Japanese AUS10 Super Steel 67 Layer High Carbon Stainless Steel, Incredible G10 Handle, Full-tang, Long & Deep 48mm Chefs Blade
I purchased this knife with mid expectations as to its performance with the company being a relatively young one. My thoughts are as below: Packaging: It arrived beautifully packaged in a presentation box with a magnetically sealed flap. When you open the box, the handle is first visible through a cutout in the high quality felt/foam, you lift the main piece to reveal the outline of the blade itself before finally lifting the last piece which covers the blade, all fitted into a shape cut black and red foam. 10/10 Presentation: Absolutely stunning, i'm not sure what else to say. The blade's pattern is beautiful, not something I have ever seen in a knife personally. You can see how the layers of steel begin to show as the blade narrows to its sharpest point. The handle is incredibly smooth with a lovely pattern running though it which is not visible in pictures of the knife. You can see the full tang running down the center and the center rivet is worth admiring. I'm personally not hugely keen on the size of the logo on the blade, it could do with being a fair bit smaller, or even removed and having the rivet showing that its a Zelite - would feel more exclusive. 9/10 Weight and balance: Excellent weight but not quite as well balanced as the Wusthof equivalent. A non issue in the practical side of things. 9/10 Sharpness: Without a doubt the sharpest knife i've ever used out of the box. You can feel that its extremely hard steel and i did the paper test with absolute ease. 10/10 Conclusion: This knife has exceeded my expectations by a huge amount. The company deserves more recognition than it currently has and I think I may just retire my Wusthofs and switch over to Zelite. An excellent product. A solid 10/10.
It's a very good knife for sure. Extremely sharp out of the box but that initial sharpness wears off and is impossible (for me at least) to bring back with just a steel. I use a fine ceramic knife-steel and this gives a good edge but the only way to get that surgical sharpness back is to use a Japanese whetstone and the traditional method. This is the same for every knife, so it's not a negative point. It's nicely balanced and I like the tapered bolster which allows for a different range of grips. The handle in particular is really nicely finished and the Japanese style rivet adds a touch of finesse. The butt of the knife is also nicely finished. It's a pity that the Damascus etching doesn't stand out more (it's nothing like the main photo of the item) as it is quite beautiful. My other Japanese Damascus steel knives have kind of faded over time so there must be some type of etching that is done to bring out this grain. The only thing I don't like about this knife is the maker's logo printed on the blade. It's at odds with the traditional design of the knife and I really don't like it. I tried to remove it but feared that I would damage the knife surface in attempting to do so. It's petty I know, and doesn't affect the knife's usage, but that's how I feel about it from an aesthetic point of view. Value wise, I think it's good. I wouldn't have been happy to pay the non-discounted price though as I think that's just too much.
Having had this knife for just under a year now, I feel I can now give a proper review of it. First of all, look and feel. It is a beautiful knife to look at and it comes in a nice box which enhances the feeling of specialness (which is always important when opening a new knife) and will also prevent any damage in transport; but when i first picked up this knife, I was delighted, the handle is gorgeous and the weight and balance is perfect in my opinion, it feels like it should cost twice the price. Now, the edge; Although it wasn't the sharpest I've ever had out the box (this may differ from knife to knife), all it needed was one pass over my steel and it was razor sharp. It was then around 6 months after that before I felt the need to use my stone to re-sharpen it- this is a knife I use for hours every day and I probably sharpen most my other knives around once every month. It definitely has the sharpest edge of any knife I have ever used or owned and I have only had to put it back on my stone once since that first time, although I do regularly hone it on my honing steel (only do this if you know how) which keeps it razor. I can't recommend this knife enough, when I'm away from it for extended periods, I actually miss it. You would have to spend a lot more money to find a knife of a similar standard, it's a bargain. If this is a little out of your price range or you just aren't sure yet, I would recommend the Victorinox 8" chefs knife in the meantime. You can get for around £25 on amazon, I also own one of these and have had it for 4 years now and everyone should own one. Better still, buy both!
This stunningly beautiful knife is very well presented in a flashy box and furnished with a super comfortable and well shaped handle that always makes it a joy to use. The six inch blade length is surprisingly long for a utility knife - at first I thought this would make it awkward to use but the very planted way it sits in the hand with absolute stability offsets this and renders the Zelite with an agility that is unusually good for this size. It has an essence of solidity missing from many cheaper knives and does cut very well indeed but with the blade ground at a steeper angle than I personally prefer. Fairness dictates that utility knives are, of course, supposed to be good all rounders therefore I must grudgingly concede that a steeper blade edge grinding angle is probably a technically correct provision by Zelite for such a tool. (Steeper blade angles cut for longer and survive tougher Jobs, Shallower blade angles cut smoother but blunt more easily.) The Rockwell hardness 61 steel core on this knife is really hard and strikes the sweet spot for good hardness without being too brittle - I think the factory edge undersells the true capabilites of this steel but I just know I will be able to re-sharpen it even sharper to my preferred shallower cutting angle when the time comes. - (Yeah, I admit am a bit of knife sharpening nerd etc) Somehow, I think I will be waiting a long time. - Excellent knife - I bought the 10" Chefs knife too. Update July 2017: This working utility knife now been used heavily, still as sharp as bought but I still really hate that steep long life factory angle so I have decided to risk re-setting it: It took well over an hour to hand sharpen the edge angle back from 15-20° ? to around 12°: Very, very hard steel indeed. I used 800 grit then 2000 grit then 10000 grit then a light strop on leather. Wonderfully fine grained steel. Result = The sharpest blade I have ever had in my kitchen. About as sharp as a cut-throat razor. Be interesting to see how long that edge holds!
Design and visuals: The knife is very well designed and even the smallest details weren't ignored, such as making sure the top of the blade is not sharp and is instead well smoothed. There is no stamp on the back of the handle of the blade with the logo of the company, to make it appear more premium, like other brands do, but it's a detail that I don't care much about. The blade is well polished however the damascus steel effects aren't very well visible. Usage: The blade is hard and will stay sharp even after prolonged period of usage. Once you grab the knife it will appear heavy, but if you know how to use a knife properly it will soon become a part of your hand and it will be comfortable even after prolonged periods of usage. The balance of the blade is very good, just where the edge meets the bolster. The shape of the edge of the blade is very well suitable to rocking cutting, but as any blade it can be used for the other types. Conclusion: The quality of the materials can be felt during usage which makes it pleasure to use the knife. A huge problem however is that the knife have a blade that is very big and it's hard to find a proper blade guard so I can put the blade with my knife case along with my other knives. However the box that it comes in is good enough for transport and storage. I am happy with that purchase and hopefully in future we will see more quality knives from Zelite.
The Zelite Infinity Executive Chefs Knife arrived exactly like the seller said it would on the date specified on purchase. The first thing you notice is the quality box that it is packaged in. Once you get the knife in your hand you realise that no attention to detail has been spared from packaging to actual product this ensures that there is extremely high quality throughout the product. This is a large knife but despite this is very comfortable in the hand, it is very balanced and the handle is extremely comfortable. As with the other Zelite knives I recently bought the blade is extremely sharp and care should be taken when using it. This is exactly what you should expect from such a high end knife. My previous knifes were always an effort to use due to the blade never having been really as sharp as one would expect even after sharpening. No such problems with the Zelite knife, fantastic edge retention and as sharp as it should be. Using the knife was what I hoped it would be. It cut up the meat I was preparing effortlessly with little sawing action needed to get through the meat. Also once the meat was cooked it sliced them perfectly to give me (unusually for me) a great presentation at a dinner party I was throwing. It also glided through the tougher vegetables such as carrots with ease. Speaking of the dinner party all the guests were taken by the look of this knife with the pattern on the Japanese VG steel blade being particularly well commented on. Overall a fantastic addition to my kitchen and I can't recommend this product highly enough. Well done Zelite and producing a high quality and Uber cool product.
I've had this knife in my wish list for some time but last Saturday it was reduced by £20 during an Amazon lightning sale so I finally pulled the buy trigger The knife was delivered within 24 hours from purchase and does indeed come in an amazing presentation/storage box Like a child on Christmas day I couldn't wait to give it a try so I got the knife out from it's box, some onions, shallots and garlic from the fridge. I am nothing more than a regular guy who likes wants to improve my cooking skills and I enjoy cooking semi fancy looking food for my children (My greatest critics) from ideas I see on the TV The knife is so beautifully weighted, it has a solid weight which gives a feeling of quality but without being overly heavy. The handle feels well built and comfortable in my hand. The mirrored polish of the blade combined with the inlaid patterning just screams quality at you As others have said the knife is incredibly sharp so do keep it away from younger children I first grabbed a shallot, cut off the ends and then sliced down the centre, the knife cutting as if it were a hot blade through butter I'm no professional chef but the knife gave me the confidence then to julienne the shallot and I was almost cutting like a professional chef both in accuracy and speed because of the sharpness of the blade and the confidence this knife gives you I then chopped the onion, again with speed and finally I sliced the garlic The next day I decided to cook pork belly where the knife was used to score the fat (against effortlessly) and then to cut the joint after cooking into 3 portions. The blade again making short work of cutting through the crackling on top and the meat itself The seller sent an email 24 hours after delivery to check I had received it and to ask if I was happy with my purchase. This is a level of professionalism seldom seen from sellers I absolutely adore this knife and advise anyone thinking about it to buy without delay. The cost might seem a little high at first but as soon as you receive it and use it you soon change to the opinion that it's actually UNDERPRICED for the beauty and performance I've added the 8" Chef's knife from this seller to my Amazon wish list. I do hope one of my (adult) children take the hint
AMAZING KNIFE. I did my research on Japanese Kitchen Knives and this was in my top 3. After much thought I went with this one. And was NOT DISAPPOINTED. It arrived on time (as expected from Amazon's great service), the presentation box is slick. The knife itself is everything I was expecting and more. The craftsmanship is spectacular, well balanced and it has some weight, which is what I was looking for. The Tempered blade looks the part and is a work of Art in itself. The Handle is comfortable and well shaped making it easy for prolonged use in the kitchen. Out of the box, the blade arrived RAZOR SHARP, I'm not kidding, you could shave with it. I actually cut my thumb on the rear end of the blade near the handle by just scraping it!!! I'm fanatical about keeping my blades sharp and use a 3000 / 8000 whetstone. No need for that right now, couldn't get it sharper if I tried. Slices everything like hot steel through butter, comfortable and easy to wield, great for speed chopping as well as more delicate slicing and shaping. HIGHLY RECOMMENDED... As with most things, it's worth the extra few pounds for real quality. This knife will last a long time (I hope) and is already a valued asset in my kitchen.
I bought this product a week ago with my own money (not a paid review).. to replace an old KIA Santoku knife which has become my go-to for practically every kitchen chore. This knife is about an inch longer than the one it replaces and is significantly heavier.. Weighing in at 265g, compared to my last knife (138g). I would recommend weighing a few kitchen knives before buying this and seeing if this really is the kind of weight you are looking for. It is also an inch longer than the knife it replaces.. bear in mind the length is the cutting edge, not tip to handle (photo attached as a reference). VG10 steel has a good reputation, and this knife is as sharp as you would expect any brand new knife to be. I will update this review after a year of use but I expect to find that it hold its edge pretty well. I have attached a photo showing clearly the size (also the box indicating that it is made in PRC (China) which I think is only fair given the marketing makes no reference to this, only the origin of the steel). My first impression is that this knife is going to become a talking point more than my go to kitchen knife and that is purely down to the weight and size (the extra inch does seem to make quite a difference to how agile it feels). I'm not sure if the weight is simply unavoidable because of the pattern welded decoration? Either way, I think it would be unfair to award less than 4 stars without actually giving it a chance, but anyone looking to buy would do well to be mindful of the above. Photo attached
I was originally drawn to this knife by the large amount of 5 star reviews that it had. I was sceptical as it is made by a company I had never heard of and was wary of spending this amount of money on an untested product. I decided to undertake my own research on the knife and the company behind it. Not finding any bad reviews at all I decided to take a punt and order it. The knife arrived in typical Amazon style packed into a large box 90% of which was packing material with the knife box nicely protected. The knife comes in a very impressive sturdy cardboard box with a magnetic farcening. Inside is the knife in its own foam cut out giving it a place to neatly put it when you’re not using it although I won’t be using it as I have a protective knife sheath I use for this size of knife. The knife its self is really very impressive with a good heft to it and as others have said wickedly sharp (which is to be expected at this price!). You will be able to easily slice through any chosen food just remember to use a proper chopping board and not directly onto a kitchen surface as this will easily blunt the blade. The handle is very nice to hold and is good after a while chopping. The knife is slightly tip heavy but I like that. The only drawback for me is on the left hand side of the blade the company has engraved there logo and name into the metal meaning that it is slightly rougher and will need to keep very clean as bacteria can build up if not kept clean. I have had the knife for 4 days and would really suggest it to people looking for a good chef’s knife. The rest of the range is looking tempting but only at the current prices I don’t know if they would be worth the full asking price and would be surprised if they ever go up to that price.
The media could not be loaded. Santoku I was eagerly awaiting the release of the Zelite Infinity knives in the UK. I had seen these marketed on social media and was impressed by their looks. I was further impressed by the reviews these were receiving in the US. I was therefore delighted when they were finally released on Amazon UK. I ordered this knife on the Thursday they were released and they were delivered the next day, what’s remarkable about this was that it was Good Friday in the UK and the delivery was free! Upon opening the Amazon box I was impressed with the quality of the packaging the knife was in and once opened the knife inside oozed quality even before you picked it up. Once in the hand the knife feels very balanced and comfortable. The 7" Santoku Knife looks stunning with its one sided beveled blade. And from an aesthetic point of view they look quality in my kitchen. Along with the chef’s knife this will be the most used knife in my kitchen due to its versatility. My previous knives (Wusthofs) always seemed to be a chore to use however this knife is so sharp and effortless that I was able to cut through food using only one hand, as can be seen in the video that I have posted when cutting an orange. Previously with the other knives this task would have resulted in the orange squishing down and squirting out when I was attempting to cut it. This time however it really was a case of a hot knife through butter.
